Weekend Summary

So. Much. Fun.

Exactly what I needed … and now I need a salad.

I headed up to Newburgh* this weekend for a mini college reunion with my best friends. Friday when I arrived in Beacon my friends greeted me with “OMG you’re so New York. Look at how you walked over here. You did this (acted out) and this (over dramatic acted out me walking to the car.)”

After cursing at the traffic and one another for no apparent reason I sighed and said, “It’s good to be back,” and boy did I mean it.

We headed to TGI Fridays for dinner and drinks. I spend $22 on dinner and four beers or so. Don’t mind if I do.

After dinner we headed to a new place on the Newburgh water front, Billy Joe’s Ribworks. This place was awesome. Great band, great beer, great friends. Clearly the first night was a success because it ended like this:

I woke up bright eyed and bushy tailed to go to lacrosse practice with Catie who coaches varsity at her old high school. After chugging a large coffee with skim milk and one splenda I was good to go.


Catie has never played lax before and it’s the school’s first year having a program and since I played in high school she asked if I’d come along. It was awesome. I loved the girls and they we’re so thankful to have me there. After practice we went back, showered, napped, ate prepped for round two.

A few more friends came up Saturday and we actually went back to Billy Joe’s. I laughed, laughed and laughed.

Another solid night for the books.

Sunday was a bit more rough than the previous morning, so how do you cure that?

Ice cream DUH. Chrissy and I went to the dining hall and snagged some. You’re looking at cake batter, coffee and chocolate moose tracks.


I wasn’t kidding about the salad. Someone send one, quick. 




*Yes this is the same Newburgh where the woman drove into the Hudson with her three kids. We actually drove past the site. So chilling/awful. Please keep the Newburgh community in your thoughts and prayers.


Oh … hey?

So I’ve read that you’re not supposed to apologize to being MIA on your blog – well I’m going to break that rule and do just that. I’m sorry for being MIA and not completing the 30 day blog challenge that the one miss Caitlin spearheaded.

I know myself and the second I hit publish on day one I thought to myself that it would be a miracle if I did this.

And no I haven’t been sitting like a bump on a log. It’s March or the best month EVER. I’ve been partaking in activities such as drinking green beer:

Phew. Let’s just say I’ve drank enough beer this month that I have all year so far. Was it glorious? Of course. Did I eat tons of corned beef? Duh. And pizza? Is the pope Catholic?

You get it. For the past three weekends I sailed back to the college days and “lived it up” if you will. Now … I’m in need of a detox. I hit the gym today and huffed and puffed my way through 2.3 miles on the treadmill and a solid 20 minutes on the stair climber. (brutal)

Also, there has been some internal changes happening at my job, i.e. Shannon is getting a lot more busy! (and hopefully not stressed)

Oh and have I mentioned that I barely get internet at my apartment? Well I don’t and it’s a blessing that it’s working right now (knock on wood) and my phone cord to plug in my iPhone to my laptop is at my friends house so I charge my phone on my iHome and emailed those pics to myself. (run-on sentence much?)

So can you deal with my randomness? I hope so 🙂

Stolen Purse and One Huge Banana

My purse was stolen Saturday night. It sucked. Real bad. As soon as I noticed it was missing I remained calm, relatively speaking. Of the three people I was with, no one had a smart phone, can you believe it? So I borrowed a random persons outside and made the necessary calls to cancel my credit cards. Called my mom to get the bank at home because I couldn’t get on their site and she (thankfully) called Verizon and reported my phone stolen.

One thing I didn’t do was cry. If you know me, I’m pretty emotional. I balled during the Boy Meets World season finale and Tila Tequila when the Italian guy was voted off. I lost it when someone stole my phone from a bathroom in college, but this time, not a tear. Perhaps it’s a sign of adulthood?

The two things I did have was my license and debit card because I had a tab at the bar. I guess that round of drinks I bought everyone paid off because I really would have been screwed.

One good thing to come out of this – I GOT AN IPHONE! And I’m obsessed.

Also, because my camera is gone, all my photos will be coming from my phone.

I’ve read around the blog world that many of you are in a funk. Well I’m your newest member. I think it’s cabin fever as my boss put it this afternoon. We can all agree that being inside 90% of the day is no bueno, however, it’s something I must learn to deal, adjust and cope with and really take advantage of lunch breaks and weekends.

On top of the funk, I haven’t been feeling 100%. To fight off the potential sickness, I downed this today:

IMG_0021A large juice from the health food store containing apple, pear, carrot and collard greens. I could sit here and write that it was so fresh, delicious and healthy and that I immediately felt better, however that would be a blatant lie. It was awful.

It was like drinking thick, green slob that’s desperately trying to be sweet but the over powering collards took over the fruit. Gross. I drank it as fast as I could repeating, “This is good for me, this is good for me.”

Then my boss went out and bought me some ginger beer.

IMG_0025He swore up and down that this would cure me. I’ve never heard of it before, but by golly it was delicious. (Yes I just said “by golly” and no it wasn’t alcoholic, rather upsetting I know)

In other news, check out this banana I smashed in my oatmeal this a.m.

Getting in the flow

Sup peeps?

A few things you must know:

  • Those buffalo chicken wontons were restaurant quality.
  • I’m laying on the floor of my bedroom typing this. Changing it up a little.
  • I’ve had an awesome week since posting this.
  • Spinning is my new shit.
  • Apparently so are lists.
  • Yoga is paying off. I can almost do one real push up. Thank you vinyasa flows.
  • My face is breaking out/really dry. Big ups to my Irish heritage and winter!
  • I pretty much have come to the realization that I do in fact live in New York and I’m getting into my flow.
  • Hipsters are ironic.
  • The fact that valentines day is Monday doesn’t bother me at all. Honestly.
  • My roommates little dog keeps running into me as I lay (lie?) on the floor because he’s super old and blind.
  • At brunch today I  had hollandaise and poached eggs for the first time ever. My thoughts? Eh
  • I’m waiting for three of my best friends get here so we can go out and cause a ruckus.
  • I tried on jeans today that I haven’t worn in forever and they were super snug. DAMN IT.
  • I have an awkward crush my cousins boyfriend’s friend. He has tattoos, a beard and is in a band. Not usually my type but hey.
  • I realize this post is totally random and has no common theme.
  • Tonight will be grand. I must take pictures.
  • I was a hot 90s kid.


  • It’s now the next day and I couldn’t post this yesterday because my internet was screwed up.
  • Last night was indeed fantastic.

Cake, Chili and Beer

The cake was a success! To be honest, I’ve definitely had better but this wasn’t half as bad as I thought. It’s a dark chocolate cake which it probably why I wasn’t too crazy about it, but the coworkers liked it 🙂 I used this recipe exactly.

Isn’t Manhattan gorgeous?

So my birthday is coming up! I’m a leap year baby, so not “technically,” but I’ll be celebrating the big 23 this year. Weird. And for those who are thinking in their head, “Leap Year! OMG I never met anyone with that birthday! When do you celebrate?” Personally, I say March 1 because I was born the day after February 28th. So there.

That being said, I have been putting lists in my Google calendar thinking about what I want.

1) Crock Pot – Come home and dinner’s ready? Check.


2)  French Press – Super strong coffee? Yes please.


3) Magic Bullet – Blend things i.e. smoothies, banana ice cream, alcoholic beverages, etc? Sign me up.


4) Mac Book Pro – Duh.


See a wee bit of a common theme? Besides the Mac Book of course which is wishful thinking.

My kitchen game needs to step up STAT and I must say these three lovely appliances would be a fantabulous beginning. (Side note: a red squiggle didn’t show under the word “fantabulous”)

In other food news, I made chili tonight!


The ingredients above was the core of the dish if you will but I was throwing every thing in this bad boy.

I started by sautéing the onion, pepper and garlic. Was out of olive oil so I used cooking spray. Gross at first, but in the end I couldn’t tell and there was not as many calories right?


Then dump the glorious beans in; I used black beans and red and white kidneys. Then I added the diced tomatoes, tomato sauce, and left over salsa that was chillen in my fridge. Then I poured the contents of this box atop.


Salt, cumin, chili powder dried onions and garlic, and masa powder. Oh and how can I forget. Rather then the broth I used …

I really just eye-balled everything and am proud of myself that it came out so good. And now I have chili to last me till the end of time.


God I’m attractive. There wasn’t a shot in hell that beer was going to waste.
